The Pineapple Linzer Cookie is an interpretation of the traditional Taiwanese pineapple cake. The cookie is made with two discs of hazelnut shortbread and filled with pineapple jam. It was developed as a sweet snack to complement the tea service at Té Company’s West Village tearoom
