It has an excellent balance of fresh olive fruitiness and buttery nuttiness, making it delicious and versatile. The color is a deep golden-green, with some opaqueness from the natural settling process. For cooking, drizzling on top of dips and salads, and dipping our bread, this is the elixir that we use in our own kitchen.
